Winter sourdough

After some experimenting, I have got the measure of my new flat’s oven and, perhaps more importantly, have taken the necessary steps to compensate for how cold it is. I’ve made a couple of successful sourdough loaves over the last week, which I suppose goes to show what can be achieved under inauspicious circumstances.Sourdough batardBatard slicedThe starter and the proving dough have to be kept near to, or even on top of, the storage heater in the living room, depending on how cold it is outside. I’ve never needed to go to those extremes before, but it gets results.Slices of sourdoughI’m currently without a broadband connection, which has curtailed my blogging recently. After spending an afternoon waiting for an engineer who didn’t turn up, I’m hoping to get connected in the next week or so. In the meantime, I’ll be doing lots more baking if for no other reason than to keep the kitchen warm.
