It emerged during our conversation that she suffered from the symptoms of Coeliac disease when she ate shop-bought bread, but did not experience these symptoms when she ate her husband\u2019s home-baked sourdough. I hasten to add that she had not been diagnosed with Coeliac, nor with gluten intolerance \u2013 it was simply that she begun to experience the same sort of symptoms. My curiosity aroused, I tried in vain to find similar stories on the web. I was obviously looking in all the wrong places, as a <a href=\"http:\/\/www.thefreshloaf.com\/node\/30463\/some-scientific-validation-health-claims-about-sourdough-bread\" target=\"_blank\">contributor to the Fresh Loaf<\/a> has posted a link to an interesting research paper on just this subject.
